Spaghetti Carbonara Recipe

Ingredients:

  • 200 grams of spaghetti
  • 100 grams pancetta (or bacon)
  • 2 large egg yolks
  • 50 grams of parmesan cheese (freshly grated)
  • 1 garlic clove
  • Salt and freshly ground black pepper
  • 1 tablespoon of olive oil

Step-by-Step Instructions:

1. Cook the Spaghetti:
Start by bringing a large pot of water to a boil. Once the water is boiling, add a pinch of salt and the spaghetti. Cook the spaghetti “al dente,” meaning firm to the bite, which usually takes about 8-10 minutes. Before draining the spaghetti, make sure to reserve a cup of the pasta water, as this will be useful for binding the sauce later on.

2. Fry the Pancetta and Garlic:
While the spaghetti is cooking, heat the olive oil in a large pan. Add the pancetta, cut into small cubes, and fry it over medium heat until it becomes crispy. This will usually take around 5 minutes. Add the crushed garlic to the pan and cook for an additional minute, just until fragrant, making sure not to burn it, as it can turn bitter.

3. Prepare the Egg and Parmesan Mixture:
In a small bowl, whisk together the egg yolks and freshly grated parmesan cheese until you get a smooth and creamy mixture. You can also season it with a bit of freshly ground black pepper. The mixture should have a thick consistency.

4. Combine the Spaghetti with Pancetta:
After draining the spaghetti, transfer it directly into the pan with the pancetta. Toss the spaghetti well to ensure it absorbs all the flavors from the pancetta and garlic. Add a little of the reserved pasta water to the pan to help loosen the mixture and prevent the spaghetti from sticking.

5. Add the Egg Mixture:
Turn off the heat and let the pan cool slightly before adding the egg and parmesan mixture. Stir quickly to ensure that the eggs don’t scramble, but rather create a smooth, creamy sauce that coats the spaghetti. If the sauce seems too thick, gradually add more of the reserved pasta water until you achieve the desired consistency.

6. Serve:
Divide the Spaghetti Carbonara into plates and top with plenty of freshly ground black pepper. For an extra touch, sprinkle some more grated parmesan on top. Serve immediately while it’s still hot.
